Due date
Add a due date (date by which the ticket needs to be closed) to a ticket.

customer open a ticket and the system automatically put date + 7 days?

I agree. It is a kind of deadline. Very important to define some priorities... I mean some functionalities from MS Project. It only for staff.
For example, here in the depart we normally make projects and schedule them in weeks or hours or days, depends of the project. -
No, this is something for the staff interface.

Do you intend for this to be added by the client? If so a custom field would probably work.
